FRIENDS LIKE THESE

The seeds I scatter all around,

In the feeder and on the ground,

Sunflower, safflower, peanuts and thistle,

I throw them out then give a whistle.

My friends they come and gather 'round,

Cardinals, chickadees and jays abound.

A thrasher, a towhee and even a dove,

Scratch on the ground or circle above.

Rabbits and squirrels visit as well,

Going after any morsels that fell.

My day begins as pretty as you please.

Who could go wrong with friends like these?

Prayers needed...

I know some of you may be scratching your head - but some of you were at Nesika tonight and are expecting this email.

For those that weren't there: Lorraine Sanford stepped off the sidelines where she had been seated and was on her way to the east - when she stepped down, she fell. The paramedics were called and a while later an ambulance brought her to Burien to Highline Hospital. Donna Craig rode with her to the hospital in the ambulance.

Lorraine has fractured or split the ball on the portion of the leg that goes into the hip. As of the time we left the hospital - about 12:30 a.m. - they were saying that it will require some sort of surgery to repair it.

I'm sure that Donna (Craig) will have more for you later when she hears from Mike.

As for me....I'm going to now go to bed & try to sleep....my feet are still ten feet off the ground. Thanks to all of you who came to Nesika tonight. It truly made my night that you were all there! Thank you all! (the answer is in the signature!)

Update on Sister Lorraine...

Hi Connie,

I don’t know if anyone has communicated with you about Lorraine Sanford’s fall so here goes. Friday night after the meeting at Nesika, Lorraine stepped away from the sideline and forgot about the step down onto the main floor. The jolt possibly cracked the ball in her left hip ball/socket and down she went. She could not move so 911 was called. They sent for an ambulance since she wanted to be transported to Highline Hospital in Burien. Nesika members were very considerate and we thank them for the attention they gave even with the excitement of Tess having just been announced as a new Grand Representative. We had Southgate members there since they were also honoring Chuck and Tess (Kent) as past matron and patron and Chuck is a dual member with us and Tess is a full time (almost) protem. Our Worthy Matron Dina and her mom Bea took Lorraine’s car to her home, we called Lorraine’s son Mike and told him what had happened, Donna (Craig) rode in the ambulance and Gary (Craig) followed to the hospital. Chuck and Tess also came and we stayed with Mike until they got the x-ray report. That is when we found out that the ball/socket was cracked. She had replacement surgery the next morning. Gary and I went up to Highline and saw her yesterday and she is of her usual high spirits. She is preparing to go into the East next term with Chuck and is continuing to make all their plans and she says she will be ready for Installation!!!! You know Lorraine!!! She will be in the hospital until Wednesday and then will be at the Highline Rehab. Center. Mike will be staying with her after she goes home.

I don’t know how much of this you want to put in the “Stars of Washington” but knew we better let everyone know.!!

Sadness in Nova Scotia&PEI...

Sisters and Brothers especially those in Nova Scotia and Prince Edward Island, I am bringing the sad news of one of our own PGM's passing. Sister Elizabeth Pettigrew PGM of Evangeline Chapter # 15 died January 7, 2008 after a brave and short battle with cancer. She is survived by her loving husband Brother Keith Pettigrew PGP also of Evangeline Chapter # 15 and their families.
There is an Eastern Star service for her this evening in White's Family Funeral Home, Kentville, N Sat 7 pm. with her funeral service tomorrowFriday(1/11)at 2 pm also at White's.
She has been a long time active member of this great order and will be sadly missed by many.

Please thank all for their prayers for John. His surgery at Harborview in Seattle was an 8 hour long one but all went very well. The doctor was very pleased with how well John did. He has steel rod sup both sides of his neck. screws, and bone fusions. He's in ICU for now on a ventilator and I'm not sure how long they will keep him there. He still needs our prayers as he has not moved his hands or legs yet but I know that God will enable him to move them soon. I praised God all the way home for the successful surgery and the many prayers that were being lifted up for him. Thank you each and every sister and brother. God bless you one and all.

Those who plan to attend Lakeside Chapter on Thursday, January 17 are encouraged to arrive by 6:30pm, clad in their finest tartans and plaids, to enjoy the entertainment presented by students from the ‘Marion Webb Scottish Dancing School’.We thank Hazel and John Matheson for making this a Lakeside tradition on “RobertBurns Night”, and for always providing the delicious homemade scones that ‘refresh’ us after the meeting.

Also, I want to remind the King County Chapters that Lakeside Chapter is still the home of the Traveling Gavel, but that our February and March Stated Meetings will be excluded as eligible for visitation to obtain the gavel.

Virginia OES has lost a jewel...

Sister Doris Rayhill, wife of Brother John A. Rayhill, Jr. PGP-VA 88-89 passed away on Sunday, January13. She was a true southern lady and will be sorely missed. Please keep Brother John and his family in your prayers during this difficult time.
Doris Burnette Howard Rayhill, 79, of Lynchburg, died Sunday, January 13, 2008. She was the loving wife of John Albert Rayhill, Jr. Doris wasborn June 30, 1928, in Lynchburg, a daughter of the late Harry C. Burnette and Virginia Viar Burnette. She was preceded in death by a brother, Harry C.Burnette, Jr. She was retired from the ChapStick Co. where she worked as aCredit Manager after 43 years of service and H&R Block where she workedfor 28 years as a tax consultant. She was a member of Beta Sigma Phi, theProfessional Women's Club/Retiree Club, and numerous other professionalorganizations. She also was active in The Order of the Eastern Star and a memberofBeulahBaptistChurch. In addition to her husband, she issurvived by a son, Gary Lee Howard and his wife, Faye Sellick, of Lynchburg, onegrandson, Matthew C. Howard and wife, Amy Mitchell Howard, of Lynchburg, and agreat-grandson, Kaelin Lee Howard, who brought great joy to her life, andnumerous other family members and friends. POLITICIANS WERE COWBOYS

I woke up this morning remembering

what I'd been dreaming about last night.

And I smiled, for it seemed so simple -

the answer to our political plight!

For I dreamed that all politicians

had spent part of their lives on the land,

honing the skills that would be needed,

when they signed on to 'ride for the brand.'

They had learned the cowboy work ethic

and what we call the Code of the West,

where a person's word and a handshake

put every agreement to rest.

There were governors and senators

getting out before break of day,

insisting that all their employees

did a day's work for a day's pay.

From each town to each city and state,

all the way to Washington, DC,

those cowboys that we had elected,

were working for you and for me,

Bills were no longer passed with 'pork,'

not one congressman's vote could be bought.

Both sides of the House were using good commonsense,'

the way cowboys have always been taught..

And when faced with important issues,

where decisions could mean peace or war,

there was no partisan bickering.

They stayed true to the oath that they swore.

To never forget just what it took.

in sacrifice, blood, sweat and tears,

for our Constitution to survive,

even after two-hundred plus years.

Oh, I wish I hadn't been dreaming,

and cowboys were the ones at the reins,

for we could vote for any of them,

and do away with these awful campaigns!

BEEF HAGGIS

1/2lb. steel-cut oats

3/4 lb. beef suet

2-1/2 lb. beef heart

2-1/2 lb. beef liver

1 lg. onion, diced

2 c. beef stock

2 T. ketchup, or to taste

3/4 T. lemon juice

Cayenne pepper to taste

Nutmeg, to taste

Lunch meat casing (available at some butchershops ... may have to order ahead of time!)

Parboil the heart andliver.(Campbell says the boiling liver is 'pretty stinky,' she recommendsthrowing some onions in the pot to cut the smell).Toast the oats in a300° oven until golden brown - this takes about 10-15 minutes, but watchcarefully.

Let the heart&livercool,&grind it with the suet using a meat grinder or food processor.Combine the meat with the remaining ingredients in a large bowl (as is often thecase with handed-down recipes, Campbell was unsure of the exact amounts ofspices used.)

Pack the mixture looselyinto the lunchmeat casings and tie the ends tight with butcher's twine.Prick the casing in a couple of places with a pin or ice pick beforecooking.The haggis will expand while cooking.

Boil the haggis for about1-1/2 hours.Serve with 'Neeps and Tatties' and Whiskey-Mustard Sauce (seefollowing recipes) or as an appetizer with crackers.

Yield:Anywhere from12 - 50 servings, depending on whether the haggis is eaten as a main course,side or appetizer.

POT HAGGIS

1-1/2 lb.steel-cut oats

2-1/2 lb.ground lamb

1/2 lb.chicken livers

1 lb.chicken gizzards

3/4 lb.minced beef suet

2 med.onions, finely chopped

1/2 c.chopped parsley

1/4 c. driedchervil (or 3 parts basil to 1 part mint)

3/8 c.minced garlic

3/4 c.chicken broth

3/4 T. lemonjuice

1 T. crushedred pepper

Salt&Pepper to taste

Preheat oven to 325°.Toast the oats in the oven on a large cookie sheet,about 10-15 minutes.Run the livers through a food processor until theyform a paste, and finely chop the gizzards.Brown the lamb (drain&discard the fat), liver and gizzards in separate pans (the liver will take on amore granular consistency as it is cooked.)Mix together all ingredients,adding more broth if needed.

Grease a large casserole dish or Dutch oven, and line with a large piece ofparchment paper or cheesecloth.Fill with the meat mixture, and then tiethe corners together loosely.Bake the haggis for 3 - 4 hours at 325° witha pan of hot water on the lower shelf of the oven.

Serve with 'Neeps and Tatties' and Whiskey-Mustard Sauce (see following recipes)or as an appetizer with crackers.

NOTE:To 'present' haggis, place a platter upside-down on top of the pot,and turn the pot over so the haggis is on the platter, seam-sidedown.

Chervil is an herb that you can buy in bulk.If you don't have it, Ridleyrecommends a mix of three parts basil to one part mint.

Yield:Anywhere from 12 - 50 servings, depending on whether the haggis iseaten as a main course, side or appetizer.

3 pounds potatoes, peeledand chopped

2 lbs, rutabagas, peeledand chopped

2 T. butter,divided

1/2 c. milk orhalf-and-half

Salt and pepper totaste

Boilthe potatoes and rutabagas in separate pots until soft (the rutabagas will takelonger).Mash the potatoes and rutabagas in separate bowls with butter andhalf-and-half or milk until the desired consistency is achieved.

NOTE:'Neeps' refers to the yellow turnip, which we call a rutabaga in theUS.They are not the same as white turnips.

NUTRITION per 3-oz serving:66 calories, 1 gram fat (less than 1 gramsaturated, 15% fat calories), 1.5 grams protein, 13 grams carbs, 3 milligramscholesterol, 1.5 grams dietary fiber, 151 milligrams sodium.

WHISKYMUSTARD SAUCE

Thisrich sauce also goes well with meatloaf and other dishes

 

1T. butter

2T. shallots

1/3c,. prepared whole-grain mustard

1/2c. half-and-half

1T. good single-malt Scotch whisky

Melt the butter in a pan over medium heat, sauté the shallots until they beginto brown.Deglaze the pan with the scotch, then stir in themustard.

Whisk the half-and-half and cook over medium heat until the saucethickens.Serve as a condiment alongside the haggis.

YIELD:8 (1 oz) servings.

14 ounce can coconut cream or milk
1/2 cupsugar

Place frozen rolls in 3 rows of 6 in a sprayed9x13-inch baking dish. Cover with sprayed plastic wrap and let thaw and riseuntil double in size. Combine coconut cream and sugar and mix well. Remove wrapfrom risen rolls and pour coconut cream mixture over the rolls (try to coat eachroll completely as you pour so they will have a consistent color as they bake.)Bake at 350°F 30-35 minutes.Note: Coconut cream mixture willthicken as the rolls cool.

Hearty Sausage&Rice Casserole
from Campbell's Kitchen

1 lb.bulk pork sausage
1 pkg. (8 oz.) sliced mushrooms (about 3 cups)
2 largestalks celery, coarsely chopped (about 1 cup)
1 large red pepper, coarselychopped (about 1 cup)
1 large onion, coarsely chopped (about 1 cup)
1 tsp.dried thyme leaves, crushed
1/2 tsp. dried marjoram leaves, crushed
1 3/4cups Swanson(R) Chicken Broth (regular, Natural Goodness(TM) or CertifiedOrganic)
1 can (10 3/4 oz.) Campbell's(R) Condensed Cream of Mushroom Soup(regular or 98% Fat Free)
1 box (6 oz.) seasoned long-grain and wild rice mix
1 cup shredded Cheddar cheese (4 oz.)

Directions:Cook thesausage in a 12-inch skillet over medium-high heat until the sausage is wellbrowned, stirring to break up the meat. Pour off any fat.Add themushrooms, celery, pepper, onion, thyme, marjoram and seasoning packet from therice blend and cook until the vegetables are tender-crisp.Stir thebroth, soup, rice blend and 1/2 cup cheese in a 13 x 9 x 2-inch shallow bakingdish. Stir in the sausage mixture. Cover.Bake at 375° for 1 hour oruntil the casserole is hot and bubbly and the rice is tender. Stir thericemixture. Sprinkle with the remaining cheese. Serves 6.TIP: EasySubstitution: For an extra-special touch, substitute 1 package (8 ounces) babyPortobello mushrooms, sliced, for the slicedmushrooms.

A pastor concluded that his church was getting into serious financial troubles.While checking the church storeroom, he discovered several cartons
of newbibles that had never been opened and distributed.
So, athis Sunday sermon, he asked for three volunteers from the congregation who wouldbe willing to sell the bibles door-to-door for $10
each to raise thedesperately needed money for the church. Jack, Paul and Louie all raised theirhands to volunteer for the task.
