The seeds I scatter all around,
In the feeder and on the ground,
Sunflower, safflower, peanuts and thistle,
I throw them out then give a whistle.
My friends they come and gather 'round,
Cardinals, chickadees and jays abound.
A thrasher, a towhee and even a dove,
Scratch on the ground or circle above.
Rabbits and squirrels visit as well,
Going after any morsels that fell.
My day begins as pretty as you please.

POLITICIANS WERE COWBOYS

I woke up this morning remembering
what I'd been dreaming about last night.
And I smiled, for it seemed so simple -
the answer to our political plight!
For I dreamed that all politicians
had spent part of their lives on the land,
honing the skills that would be needed,
when they signed on to 'ride for the brand.'
They had learned the cowboy work ethic
and what we call the Code of the West,
where a person's word and a handshake
put every agreement to rest.
There were governors and senators
getting out before break of day,
insisting that all their employees
did a day's work for a day's pay.
From each town to each city and state,
all the way to Washington, DC,
those cowboys that we had elected,
were working for you and for me,
Bills were no longer passed with 'pork,'
not one congressman's vote could be bought.
Both sides of the House were using good commonsense,'
the way cowboys have always been taught..
And when faced with important issues,
where decisions could mean peace or war,
there was no partisan bickering.
They stayed true to the oath that they swore.
To never forget just what it took.
in sacrifice, blood, sweat and tears,
for our Constitution to survive,
even after two-hundred plus years.
Oh, I wish I hadn't been dreaming,
and cowboys were the ones at the reins,
for we could vote for any of them,
and do away with these awful campaigns!

BEEF HAGGIS

1/2lb. steel-cut oats
3/4 lb. beef suet
2-1/2 lb. beef heart
2-1/2 lb. beef liver
1 lg. onion, diced
2 c. beef stock
2 T. ketchup, or to taste
3/4 T. lemon juice
Cayenne pepper to taste
Nutmeg, to taste
Lunch meat casing (available at some butchershops ... may have to order ahead of time!)
Parboil the heart andliver.(Campbell says the boiling liver is 'pretty stinky,' she recommendsthrowing some onions in the pot to cut the smell).Toast the oats in a300° oven until golden brown - this takes about 10-15 minutes, but watchcarefully.
Let the heart&livercool,&grind it with the suet using a meat grinder or food processor.Combine the meat with the remaining ingredients in a large bowl (as is often thecase with handed-down recipes, Campbell was unsure of the exact amounts ofspices used.)
Pack the mixture looselyinto the lunchmeat casings and tie the ends tight with butcher's twine.Prick the casing in a couple of places with a pin or ice pick beforecooking.The haggis will expand while cooking.
Boil the haggis for about1-1/2 hours.Serve with 'Neeps and Tatties' and Whiskey-Mustard Sauce (seefollowing recipes) or as an appetizer with crackers.
Yield:Anywhere from12 - 50 servings, depending on whether the haggis is eaten as a main course,side or appetizer.
NUTRITION per 4-oz.serving:276 calories; 18 gm. fat (9 grams saturated, 59% fat calories);28 grams protein, 9 grams carbs, 196 milligrams cholesterol, 1 gram dietaryfiber, 115 milligrams sodium.

POT HAGGIS

1-1/2 lb.steel-cut oats
2-1/2 lb.ground lamb
1/2 lb.chicken livers
1 lb.chicken gizzards
3/4 lb.minced beef suet
2 med.onions, finely chopped
1/2 c.chopped parsley
1/4 c. driedchervil (or 3 parts basil to 1 part mint)
3/8 c.minced garlic
3/4 c.chicken broth
3/4 T. lemonjuice
1 T. crushedred pepper
Salt&Pepper to taste
Preheat oven to 325°.Toast the oats in the oven on a large cookie sheet,about 10-15 minutes.Run the livers through a food processor until theyform a paste, and finely chop the gizzards.Brown the lamb (drain&discard the fat), liver and gizzards in separate pans (the liver will take on amore granular consistency as it is cooked.)Mix together all ingredients,adding more broth if needed.
Grease a large casserole dish or Dutch oven, and line with a large piece ofparchment paper or cheesecloth.Fill with the meat mixture, and then tiethe corners together loosely.Bake the haggis for 3 - 4 hours at 325° witha pan of hot water on the lower shelf of the oven.
Serve with 'Neeps and Tatties' and Whiskey-Mustard Sauce (see following recipes)or as an appetizer with crackers.
NOTE:To 'present' haggis, place a platter upside-down on top of the pot,and turn the pot over so the haggis is on the platter, seam-sidedown.
Chervil is an herb that you can buy in bulk.If you don't have it, Ridleyrecommends a mix of three parts basil to one part mint.
Yield:Anywhere from 12 - 50 servings, depending on whether the haggis iseaten as a main course, side or appetizer.

Boilthe potatoes and rutabagas in separate pots until soft (the rutabagas will takelonger).Mash the potatoes and rutabagas in separate bowls with butter andhalf-and-half or milk until the desired consistency is achieved.
NOTE:'Neeps' refers to the yellow turnip, which we call a rutabaga in theUS.They are not the same as white turnips.
NUTRITION per 3-oz serving:66 calories, 1 gram fat (less than 1 gramsaturated, 15% fat calories), 1.5 grams protein, 13 grams carbs, 3 milligramscholesterol, 1.5 grams dietary fiber, 151 milligrams sodium.

Thisrich sauce also goes well with meatloaf and other dishes

2T. shallots
1/3c,. prepared whole-grain mustard
1/2c. half-and-half
1T. good single-malt Scotch whisky
Melt the butter in a pan over medium heat, sauté the shallots until they beginto brown.Deglaze the pan with the scotch, then stir in themustard.
Whisk the half-and-half and cook over medium heat until the saucethickens.Serve as a condiment alongside the haggis.
YIELD:8 (1 oz) servings.

14 ounce can coconut cream or milk
1/2 cupsugar
Place frozen rolls in 3 rows of 6 in a sprayed9x13-inch baking dish. Cover with
sprayed plastic wrap and let thaw and riseuntil double in size. Combine coconut
cream and sugar and mix well. Remove wrapfrom risen rolls and pour coconut cream
mixture over the rolls (try to coat eachroll completely as you pour so they will
have a consistent color as they bake.)Bake at 350°F 30-35 minutes.Note: Coconut
cream mixture willthicken as the rolls cool.

Sausage&Rice Casserole
from Campbell's Kitchen
1 lb.bulk pork sausage
1 pkg. (8 oz.) sliced mushrooms (about 3 cups)
2 largestalks celery, coarsely chopped (about 1 cup)
1 large red pepper, coarselychopped (about 1 cup)
1 large onion, coarsely chopped (about 1 cup)
1 tsp.dried thyme leaves, crushed
1/2 tsp. dried marjoram leaves, crushed
1 3/4cups Swanson(R) Chicken Broth (regular, Natural Goodness(TM) or
CertifiedOrganic)
1 can (10 3/4 oz.) Campbell's(R) Condensed Cream of Mushroom Soup(regular or 98%
Fat Free)
1 box (6 oz.) seasoned long-grain and wild rice mix
1 cup shredded Cheddar cheese (4 oz.)
Directions:Cook thesausage in a 12-inch skillet over medium-high heat until the
sausage is wellbrowned, stirring to break up the meat. Pour off any fat.Add
themushrooms, celery, pepper, onion, thyme, marjoram and seasoning packet from
therice blend and cook until the vegetables are tender-crisp.Stir thebroth,
soup, rice blend and 1/2 cup cheese in a 13 x 9 x 2-inch shallow bakingdish.
Stir in the sausage mixture. Cover.Bake at 375° for 1 hour oruntil the casserole
is hot and bubbly and the rice is tender. Stir thericemixture. Sprinkle with the
remaining cheese. Serves 6.TIP: EasySubstitution: For an extra-special touch,
substitute 1 package (8 ounces) babyPortobello mushrooms, sliced, for the
slicedmushrooms.

pastor concluded that his church was getting into serious financial
troubles.While checking the church storeroom, he discovered several cartons
of newbibles that had never been opened and distributed.
So, athis Sunday sermon, he asked for three volunteers from the congregation who
wouldbe willing to sell the bibles door-to-door for $10
each to raise thedesperately needed money for the church. Jack, Paul and Louie
all raised theirhands to volunteer for the task.
Thepastorknew that Jack and Paul earned their living as salesmen andwere likely
capable of selling some bibles. But he had serious doubts aboutLouie
who was a local farmer and who had always kept to himself because hewas
embarrassed by his speech impediment.
Poor Louiestuttered badly. But, not wanting to discourage Louis, the pastor
decided to lethim try anyway. He sent the three of them away with the back
seat of theircars stacked with bibles. He asked them to meet with him and report
the resultsof their door-to-door selling efforts the followingSunday.
Anxious to find out how successful they were, thepastor immediately asked Jack,
"Well, Jack, how did you make out selling ourbibles last week?"
